Baked Cheesy Garlic Cauliflower

I will never look at Cauliflower the same again. I bought one the other day with the thought of trying to get some more fresh vegetables in. I looked at it in the fridge today and realized I better use it before it goes bad. I looked at the other ingredients I had and this is what I came up with. 

I can't tell you how delicious this was. It just melts in your mouth. It doesn't have tons of calories because it is just a little bit of cheese and butter but just enough seasoning for a wonderful flavor. I will double the batch next time with 2 Cauliflowers because I ate three servings alone. 

Please share with me how you like this, I want to see if you like it as much as I did. I can't wait to make it when my kids are here.  I will finally now have a way to get them to eat Cauliflower. You will not be disappointed and it is so easy to make.

I absolutely love a good salad. Everyone has their very own favorites they like that they choose from a salad bar. I didn't have to cook for anyone else but myself so I decided to have my favorite Triscuit salad. I normally used Roasted Garlic Triscuits but the new Dill Sea Salt and Olive Oil are really good as well. 

All you need to do is created your salad as you normally would with your favorite items and top with crumbled Triscuits. I think they are way better and healthier than croutons. My favorite salad consists of these few items.

 Wow, it has been a really long week. Phew, I am glad it is Friday. It's just me and the boys tonight. 
I love these little guys. Rewfuss and Cougar and of course Cougar's girlfriend. She looks kind of crabby tonight. 




Hope you all have had a wonderful week and have something fun planned for the weekend. Me? Nothing, just relaxing, cooking, catching up on sleep and reading. It is my quiet time weekend. Yay me!

This recipe I found at Crumb Blog is a great idea because you don't have to worry about people double dipping bread into the artichoke dip. This way each person gets their own piece. I have always been a huge fan of artichoke dip but love this idea of the bread.

Well, if you can look at this picture and not instantly be hungry than you are a better person than I am. I just love love love anything baked with cheese. It might be a slight obsession.

I have the house to myself and it is so quiet! I almost feel uncomfortable because I am so used to the loud noise with the kids. Whoa........Maybe I will make some popcorn and play on Pinterest.

Before I do I want to share this yummy Spinach and Cheese Strata that I found at Annie Eats. I think it looks wonderful and would be great to serve for a nice brunch. Nom Nom.

I just thought this was a really cool looking bird so I posted it. It is kind of what I look like and feel like when I wake up in the mornings....I am not a morning person.

Speaking of popcorn. This cracks me up every time I see it! A couple of years ago I went to take a bite of a piece of popcorn and felt like it was staring at me......so I took a picture. He is even shined up with butter. I love it.

Cheese Bread - Like Red Lobster


I love bread, I love cheese and I especially love baked cheese. A long long time ago I was on the Atkins diet and I was doing ok on it I guess. My husband and I went out to dinner at Red Lobster which was easy enough on the Atkins diet until those devilish biscuits came out. I pretended they weren't there, I ignored them because I was strong. My husband went to the restroom and I thought "One little bite won't hurt". When he came back I had a mouthful of biscuits and tried to hide it but couldn't talk. We both started to laugh hysterically. Oh well, no one is perfect right?

This is a wonderful recipe I found at Praying for Parker This is a very inspirational blog and not only is this a wonderful recipe she has a very touching story about her son Parker who was born with Down Syndrome along with many other medical problems. Please take the time to read his story if you can.

I know I know, I have gone a little crazy lately on the Mexican dishes. I can't help it, they are so delicious and I can't help but crave them. There is something about those flavors when they all come together that just make the perfect meal. 

These Jumbo Chicken Enchiladas are soooo good and super easy to make. You will not be disappointed, I promise. My daughter came out this weekend and she loved them. We ate them the next day and they were even better. I served them with Pinto Beans and topped it with sour cream, green onions and a little bit of salsa. The combination was perfect. The sauce mixture is divine.

My daughter is visiting this weekend and told me I needed to find a good cookie recipe for the blog so here it is! I wanted to find something that I haven't made before. I came across this recipe on Brown Eyed Baker and found what I had been looking for.

 Peanut Butter, Oatmeal AND Chocolate Chips can't go wrong together. They look absolutely wonderful and I really wish I had a plate with warm cookies right out of the oven right about now. 

I don't usually crave sugar, I am a butter and salt kind of gal,
 but these ingredients together did it for me!

This is one of my new favorite meals. The proof is in the picture, the last picture shows an empty bowl. I was so excited to have a delicious lunch for work the next day and it was ALL gone. Next time, I will make more chicken.

My pickiest eater ate it which is always a huge success. She really liked it and even had seconds. It was really easy to make, I thought 12 chicken thighs would be enough but next time I will do more because it makes lots of sauce and there just wasn't enough for our hungry family of 5. 

The chicken is SO GOOD cooked in the crock pot. I would stick with chicken thighs though, I don't know how good chicken breasts would be, the thighs just fell apart. I used boneless but there is no reason you can get the ones with bones in the just take off the skin.

 The chopped up green onions and sesame seeds gave it the perfect added flavor.  It really was delicious.

I can't tell you how many times my family have made a Wendy's run to get chocolate FROSTY'S!!!!  We are addicted and LOVE LOVE LOVE them. Especially in the summer, they are so refreshing. 

A couple months back I bought an ice cream maker from the Thrift Store from what looks like the 70's. love it. Now I can't wait to use it to make Frosty's of our own.

One thing I love about potatoes is that you can buy a big bag for about $2.00. I use potatoes quite often for that reason alone. They are cheap, they are filling and they are delicious. There are so many great recipes you can make with potatoes. 

Yesterday, I got creative and created the Loaded Skillet Potatoes.  Everyone in the family gobbled them down. I did have to eliminate the onions for one of the kids though. Topped it with green onions and ranch, it tasted like the best baked potato ever. Very filling and makes quite a bit. 

Leftovers could be used for breakfast the next morning with eggs. I took my leftovers for lunch.

I love Chinese food, always have. I have several recipes already on here that I have done but really like this recipe I found and wanted to share it with you. I have looked around for a few different recipes but the ingredients in this dish and the simple and easy steps was the one that sounded the best.

Jenny who is the creator at Rainy Day Gal has a delicious Beef with Broccoli recipe. She has a wonderful step by step tutorial on this easy to make meal. Serve it over rice and you have your own fresh homemade Chinese food. Thanks for sharing Jenny!

Sunday I went for a drive by myself to get out of the house and clear my head. I did some driving and some hiking.  It has been kind of a rough week and there is nothing better than getting out in the wide open spaces of Wyoming and just taking off. Here are a few of my friends I met along the way. It reminded me of why I love it so much here. There are roads that take off in every direction. It's a beautiful place although the winters are rough it is worth it when you get to experience Summer all over again.

Now to the food that I had cooking while I was gone......

This chicken is so easy to make and the flavor is not to overpowering but just enough to taste really good. 

Ingredients

 3 to 4 large Boneless Chicken Breasts
1 package of Taco Seasoning
1 8 oz. can of Enchilada Sauce. I used El Paso. 
Shredded Mozzarella Cheese
Shredded Sharp Cheddar Cheese
Tortillas
Salt and Pepper

Garnish with Avocado, Tomato, Sour Cream and Cilantro. 

Directions

Put chicken breasts in crock pot and pour a package of taco seasoning on top then pour can of enchilada sauce on top. Add at least 2 cups of cheese. The more the better in my opinion. Add some sliced green onions, salt and pepper and cook on high for 4-5 hours or 8-10 hours on low. When it is done shred the chicken and start building the burrito. Chicken first with a little sauce, cheese, cilantro, onions and little bit of sour cream. Fold and top with more sauce, avocados, sliced tomatoes and a dollop of sour cream. Oh so delicious.







 
 

 

I hope you enjoy this as much as we did. It really is good. The Spanish rice is amazing but I am still trying to get permission on sharing it. It is the creators very special authentic recipe that everyone loves so I have to respect that, but I am not going to quit trying!  If any of you know of a good Spanish rice recipe please share!
