You should use a transparent glass pot cover for that. It's easier to see when the eggs are done. Buy a good non-stick pan and drop a little oil, then spread it with a paper towel. It'll also remove the excess oil. Low to medium flame and a glass lid. Voila'! Perfect "rosy" steamed eggs. That's how they do it in Brazil. Just cover with a lid. As the water from the steam falls from the lid and sizzles, you know the eggs are done - soft and cooked perfectly.
