Zesty Lime Shrimp and Avocado Salad



I for one am really happy for low cal recipes like this one. I love the taste of food so dieting is about as fun as getting a Root Canal because I don't want to give up the great taste of good food. I just can't do it! Well, I could but I don't want to. 

I'm sure I could fatten this up a little bit if I wanted to by adding real crispy Bacon and some Hidden Valley Ranch for some extra taste but it really does look wonderful just the way it is! Don't you think? I could really eat this! You could always add some goodies if you wanted.

The picture really speaks for itself. Look at this delicious salad that doesn't even look low fat it just looks wonderful. This is a great go to Salad for a Summer Party. 

 I am really impressed with the low fat recipes that Skinny Taste puts out so you should take a look at their website if you are looking for good low cal meals. They come up with some really great ideas and tasty ones. Enjoy!




Zesty Lime Shrimp and Avocado Salad

·                     1 lb jumbo cooked shrimp, peeled and deveined, chopped*
·                     1 medium tomato, diced
·                     1 Haas avocado, diced
·                     1 jalapeno, seeds removed, diced fine
·                     1/4 cup chopped red onion
·                     2 limes, juice of
·                     1 tsp olive oil
·                     1 tbsp chopped cilantro
·                     salt and fresh pepper to taste

Servings: 4 • Serving Size: 7/8 cup • Old Points: 4 pt • Points+: 5 pt
Calories: 210.4 • Fat: 9.2 g • Protein: 25.1 g • Carb: 7.8 g • Fiber: 3.6 g • Sugar: 0.6

Sodium without salt: 260.8 mg  

In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.

  1. This recipe looks amazing Dori! I can't wait to try it. It's gluten free, high protein and full of "healthy" fats...very good for you. I love the idea of adding bacon too! Thanks for sharing.

  2. Dori, what a great recipe! We call this ceviche. We "cook" the shrimp (or chunked white fish) in lime (or lemon) juice. You have nailed it.
