"That Salad" by Marianne Warner






"That Salad" and Spinach Wraps


Have you ever been to a gathering and had a really good salad someone brought and thought you should get the recipe and then forget to ask? Then it comes time where you have been asked to bring a salad and you remembered that great dish so you ask that person if you could have the recipe for "That Salad" they made?
Well that is how this salad got its name. 

My dear sister in law Marianne passed away several years ago, she is an amazing woman who could throw a party like no one else and ALWAYS made the most amazing food! Everyone would ask her about "That Salad" that she made and so the name stuck. It is so amazingly good. She is legendary for her recipes and especially her "Orange Rolls" and "Butter Cake".

 I miss her dearly, she used to always tell me "I'm your biggest fan".  She had the greatest laugh in the whole world. That always made me smile. I know she is up in heaven somewhere in charge of throwing all the parties because she is amazing. She loved her life and lived it well. 

Marianne's daughter Katherine made a wonderful recipe book with some of Marianne's best recipes and family pictures then gave it to her Dad for Christmas after she had passed. 

So with her daughters permission I am going to share "That Salad" with you today.

Found these tasty bars at Just a Taste.  I had to share them with you. I have had my eye out for a good pecan recipe for a while now and this one has to be as good as it looks. After reading the comments there is no doubt that they are amazing.

Easy Scones with Butter and Powdered Sugar

UPDATE!  I have received several comments that these are NOT Scones. To me they are the only Scones that I know. I grew up only knowing them as Scones, on the Terrel's website below, they call them Utah Fried Scones. One the Rhodes Rolls website they call them Scones/Fried Dough/Elephant Ears. Growing up in California we called them Scones. I am in no way trying to pass something off that isn't what it is this is all I know. Must be a west coast thing or. Either way they are delicious and that's my story and I'm sticking to it! :) Hope you enjoy them!


I hope you had a wonderful Memorial Day today. I just wanted to say how grateful I am for the men and women who serve for our freedom every day. It is not easy being a soldier or a soldiers wife, I know because my husband was a soldier for 13 years. Thank you for the service you give to our great country. 



Scones with Butter and Powdered Sugar


These delicious scones are super easy to make and they are DELICIOUS! We save these for special occasions because they are one of our kids favorite treats in the whole world. They appreciate them more when they get them on holidays. They requested them today and I was happy to oblige. 


The only ingredients to this are the rolls, oil, butter, honey and powdered sugar! These Terrel's County Roll/Scones are available in 9 states right now. I don't see why you couldn't use Rhodes rolls as the same thing. These are really good if you can get them. They are in the roll freezer section. Highly recommend them!


A while back when I was working in Utah we had a fundraiser and a friend of mine knows the owner of Terrel's who donated several bags for us to make scones. I have been hooked ever since. 



INGREDIENTS
12 Terrel's Country Bakery Rolls thawed and risen
vegetable oil
powered sugar
butter
jam or honey if desired

DIRECTIONS
Pour oil 2 to 3-inches deep into a small sauce pan or an electric frying pan and heat to medium high setting or 375°F. Flatten each roll into a 5-inch circle. Mine are always square.  Fry dough on each side until golden brown (about 15 seconds each side). Remove and drain on paper towel. Serve hot.

Sprinkle with powdered sugar or serve with butter, honey or jam if desired.

Chicken Quesadillas with Ranch




Chicken Quesadilla with Ranch

It might as well be chicken month here on Riches to Rags by Dori because I have sure done lots of chicken recipes! Yesterday I made the Chicken and Rice with Broccoli and Bacon. I had some leftover chicken breasts so I put them in the fridge. Today, we are stuck indoors again because of the wicked and cold Wyoming wind. While I was trying to figure out what I was going to make for lunch (I did NOT want to go out in this weather). I remembered I had the leftover chicken breasts. Salad didn't seem good, I saw the tortillas and has just bought two big bags of different cheese so that is how these came to life. Very filling, very delicious and very easy to make. Everyone LOVED them. 

Ingredients

Sliced cooked chicken breasts
Mozzarella Cheese (as much as you like)
Sharp Cheddar Cheese (as much as you like)
1/2 stick of melted butter to coat tortilla 
Salt, Pepper and Garlic Salt
Ranch Dressing and Salsa (optional)

 Directions

Heat skillet over medium high heat. Melt the butter in a bowl. Brush both sides of the tortilla (I just used regular flour tortillas) and put in hot skillet. Top with both cheeses and then sliced chicken. Season with garlic salt and pepper. Let sit until the outer edges cheese start to melt. Fold half over and flip. When all the cheese is nicely melted it is done. You can turn it an additional time if you want. Serve with your choice of garnish. Ranch dressing, salsa, avocado, green onions or lettuce. 









This was really quite enjoyable. Who needs a fancy restaurant, we can make these beauties ourselves! It taste just as good if not better. Hope you enjoy!

Hope you are enjoying your Memorial Day weekend. We had terrible all day here and then about 6pm it started to rain and the winds stopped. Those winds about drove me crazy! I decided to cook this meal since I couldn't go outside. This terrible weather also started the wheels rolling in my head on my next giveaway! Check back in the next couple of day for the next awesome giveaway!

Once in awhile I like to make Chicken and Rice. My mother has made this since I can remember. Although I love the recipe I wanted to change it up a bit and add some goodies. After thinking about it I thought adding some bacon, broccoli and cheese to the mix drizzled with ranch dressing would be heavenly! I was really happy with how it turned out. There was so much more flavor and ranch dressing always is served with this meal with a salad and a little drizzled on top of the Chicken and Rice.  I took pictures of the process for you. Enjoy!

Look how creamy that is! Anyone that knows me knows that I have a weakness for Chips and an even bigger weakness for Chips and Dip! I personally would give my right are for the secret Queso recipe from Cafe Rio. It is my all time favorite. I have actually thought of just working there for a week just so I can have the recipe. Isn't that terrible???? 

 I have always loved Nachos with creamy cheese sauce on top. Yum. The problem is Velveeta cheese is so processed! This recipe DOES NOT have VELVEETA CHEESE in it. That is the best part! The other great part is you can make it as spicy or mild as you want.  

I found this recipe on Kitchen Simplicity and I was so surprised after looking at the beautiful picture that there wasn't any Velveeta in it and that hooked me. So I am here to share with you this great recipe from Kitchen Simplicity so now you can have less processed Homemade Creamy Nacho Cheese Dip! Yay!

Last night before we watched the American Idol Finale (yay for Phillip!) my kids were itching for a snack. I looked in the fridge and saw that I had a can of Biscuits so I thought I would try to make something new and this is what I came up with. They were delicious and the kids loved them. Super fast and easy. They ate the rest for breakfast this morning before I even got out of bed! Sneaky.

My kids LOVE Smore's and they always get super messy making them which is probably half the fun. We rarely have them though because we only do it when we are around a campfire.  Now with this yummy recipe we can have it at home for dessert after a barbecue or anytime we want!


I found this idea on One Ordinary Day. She has some really good recipes on her site.  My daughter was with me when I spotted it and made me pinky promise we would make it this weekend. Pinky promises are serious so I guess I am making it. Really easy to eat and much less of a mess. We will still do the traditional one when we go camping though. This is a nice alternative for home.

Just look at those perfect little cupcakes on that perfect little platter. I have seen lots of Red Velvet Cupcake recipes, but what I like about this one is the simplicity of it and the Cream Cheese Cool Whip Frosting!

One thing that is important to me is to provide you with incredibly delicious recipes that aren't to difficult to make and don't take lots of time. I have a 1st, 2nd and 3rd grader, there is no time for gourmet difficult meals. Once in a while I do splurge and make something that takes a long time, but the work is always worth it. Normal days, No. 

I love the little flower designs on top! I want that platter they are on so if anyone recognizes it please let me know where I can get it. If I find it I might just have to get two of them and give one away as a GIVEAWAY! Help me find it!

I can't believe it's Saturday again! This week went by so fast and there are only two more weeks of school left for the kids! I don't know if I am quite ready for summer yet, but I guess I better hurry up.  

Tomorrow is my husbands birthday. I asked him what he wanted for his birthday dinner and he asked if I would make it tonight instead of tomorrow. Sure, why not! He also asked that I would make my Creamy Coleslaw with the steaks he was going to barbecue. It is a really easy recipe so I made it and thought I would share it with you because he says he loves it more than any other coleslaw he has ever had! I have been making this for as long as I can remember. It's a super quick, easy and a delicious recipe that you can make for your home or for a party. Throw it together and let it sit in the fridge for several hours.
