Homemade Light "Boursin" Garlic and Herb Cheese

 
 It was unusually warm this evening on Halloween here in WY. It wasn't just last week that we had 9 degree weather and tonight we were wearing T-Shirts. It was awesome. The kids looked so adorable, had a great time and have enough candy to last a year. Getting them to settle down and go to bed was a chore but they are quietly sleeping now. I love that they are still young enough to enjoy this.

I was really happy when I found this recipe because I LOVE BOURSIN CHEESE SPREAD!

I don't buy it very often because it is just to expensive so I make it last a long time and enjoy every bite. Now I can make this and have it anytime I want.

I have used Boursin on sandwiches instead of Mayonnaise and it is amazing. You can use it so many different ways. You can dip vegetables in it, put on crackers, spread on baguettes and use on sandwiches.

Chicken and Cheese Broccoli Alfredo Pasta 
 
 Tonight I baked 75 cookies for the kids to take to school tomorrow for their Halloween parties that they are so excited about. I was so tired but couldn't resist their excitement about helping Mom make cookies. I am glad that I took the time to spend with them because the hugs and "I love you Mom" made it all worth it.

Tomorrow is going to be crazy because it is Halloween. I work all day and then off for Trick or Treating when I get home. I can't wait to take pictures and share it with you. The weather is suppose to be great, I just hope they don't eat to much candy when I am not looking. I am outnumbered with three of them!

Since it is going to be so crazy Halloween night, I am asking the hubby to make this simple meal that we can eat as a family before the madness begins. I think Halloween should always be celebrated on a Saturday!

Chicken Club Sandwich




Chicken Club Sandwich

I did lots of cooking this weekend and loved every minute of it. I haven't been able to do that for a while. We also carved pumpkins with the kids and had some good family time, lots of laughs and a pumpkin mess.



 




This might possibly be the best sandwich I have ever made. It was sooooo goooood. Chicken, Bacon, Cheese, Avocado's and Tomatoes. Oh my, it was awesome. The bread was really good too, I bought it at Walmart for $1.69 a loaf in the bakery section and it is called Everything Italian Bread and it gave it even more flavor. 

You can add your own ingredients to this sandwich. Red onion slices would be good, lettuce, Ranch Dressing, etc. I will add all of those next time for the ULTIMATE Sandwich. 

This is YOUR sandwich so make it with what you love. Put as much or as little of the ingredients to your satisfaction. As you can see I love cheese. You can't even see the chicken!

Ingredients

Chicken Breasts
Mozzarella Cheese
Bacon
Avocado
Italian Bread
 Butter

Directions

Cook your bacon. Cook your chicken. I buy thick fresh Chicken Breasts and then slice them in half the long way. I coat them with Olive Oil and then season them with my favorites seasonings. My seasonings are Lawry's, Garlic Salt, Pepper, Dried Parsley Flakes and Onion Powder. Put a little Olive Oil to coat the bottom in a skillet or cast iron pan. Put the chicken in and let them cook on medium high until brown and then flip and brown the other side. Generously butter the outsides of the bread, add chicken, bacon and cheese and cook it like a grilled cheese sandwich. When it is browned nicely on both sides and the cheese is melting you can take it off and then add all the other goodies.








I can't tell you how good this was, you are just going to have to taste it for yourself. Let me know if you make it and what changes you did to make it your own.

Sweet Peppers Pasta Salad

A couple of weeks ago I spent some time with my sisters (your might know them better as Camp Wander and One Good Thing by Jilleeand my sister Becky made this incredible Pasta Salad. It had the best flavor and I couldn't get enough of it. I asked her what was in it and she showed me the bag of Mini Sweet Peppers and they were the star of the salad along with the fresh Basil from her garden. 

I attempted to make the same salad off of memory.  I found the Mini Sweet Peppers at Smith's and bought some Cilantro, Parmesan Cheese and a Red Onion. It is about as simple as it gets. You can add whatever goodies you want but I was happy with this. The flavor is really good and my husband LOVED it. You would expect there to more in the salad but all the flavor comes together for a great taste. 

Ingredients

Pasta of Choice
4-5 mini sweet peppers
1/4 cup of Parmesan cheese
1/2 red onion
1/4 cup of Cilantro
Basil to taste (optional)
Olive Oil
Salt and Pepper

Directions

Cook your pasta and rinse in cool water. Cut up peppers, onions and cilantro and add to pasta. Pour desired Olive Oil, just enough to coat the pasta nicely and pour in Parmesan Cheese and mix well. Add salt and pepper to taste. 
That is it! Is is really simple and really good. Aren't the colors pretty?

I am always so happy when it is Friday. More family time, more cooking time and more blogging time. No more snow and lots of sun tomorrow. I might even make a trip to my favorite Thrift Store. It seems like I am always rushing so I am thrilled when I find recipes like this that are so quick and easy.

Why haven't I heard of this before? This is a great idea! So easy, only a few ingredients and doesn't have all that yucky stuff that the store bought frosting has. I can't eat that stuff, I just can't. This is so fast to make and so much better. 

I found this recipe on The Yummy Life. Monica from The Yummy Life also has a Vegan and Non-Dairy option. She has step by step pictures. You can use it to top on sheet cake, cupcakes, cookies or spread on Graham Crackers.

Cranberry Buttermilk Breakfast Cake

The weather is getting cold (at least here in WY) and I LOVE to bake when it is cold. Let's just check the temperature outside........9 degrees with the wind chill. Yep, I think it is cold enough to bake now. 

Bless Alexandria and her Kitchen for making and sharing this amazing recipe. The pictures are amazing and who wouldn't want to wake up to this masterpiece in the morning. She makes this for Christmas morning by making it the night before and then baking it in the morning. How wonderful this must make the house smell in the morning when waking up.

The great thing about this recipe is you can use different berries. If you aren't a fan of Cranberries than you can choose Blueberries, Raspberries and more. I love Blueberries and Boysenberries. 

I found this recipe on Alexandria's Kitchen and fell in love with the beautiful photography. Her pictures make you want to eat it right off the screen. I hope you enjoy it.
