All Purpose Stir Fry Sauce

Sometimes it gets really windy here in Wyoming. Today is one of those days. The power went out for about two hours so guess what I did? I took a nap! It was the most wonderful thing ever with a warm blanket that I haven't done in a very long time. You should try it! I woke up ready to blog something. 


Well maybe my couch isn't that nice and my make up all perfect but it was wonderful.

Now back to reality and food....

I have seen this sauce more and more and then started to see all the great reviews coming in so I wanted to share it with you. I found this on Food.com and lots of people are raving about it. This would be so great to have on hand and would make preparing a meal so much faster by just steaming some vegetables and making noodles.

Tuna Pasta Salad

I am sharing with you a recipe that I have made for years and years and years. Ok, maybe not SO MANY years, I am only 43 geez! I love it just the way it is but you can do whatever you want with it and make it your own. This has been in my family since I can remember and I always loved when Mom made it. It is delicious, not pickled, I have never been quite the fan of pickled salad. Easy, good and the kids devour it. I am a stickler for the original and I love the Ruffles chips with it. Superbowl is coming up and this is a great dish to take or make. Enjoy!

Ingredients

5 cups of cooked pasta
1 can of white tuna in water
1 cup of shredded cheese (I prefer sharp cheddar)
3 chopped green onions
ruffles original chips
salt (1 teaspoon) and pepper to taste
Squirt of regular French'smustard (see picture) little less than a teaspoon?
1 cup of mayo
3/4 cup of sour cream

Directions

Cook the pasta and rinse with cold water. In a separate bowl add the tuna, cheese, onions, salt and pepper. In another bowl mix the mayo, sour cream and mustard. Then mix it all together and serve cold. Salt and pepper to taste. Serve with Ruffles Original Chips.

Green Chile Pepper Jack Chicken Enchiladas

I am so excited about this post because these are THE BEST Chicken Enchiladas ever. This is my Aunt Marianne and my niece Katherine's recipe.  My dear Aunt Marianne passed away several years ago unexpectedly and is an incredible woman. I miss her. Oh, is she an amazing cook and Katherine is as well. 

 The key to this recipe is the Pepper Jack Cheese so don't substitute it if you don't have to. Katherine says "This is important, not Monterey Jack and definitely not cheddar, but Pepper Jack Cheese.  I wouldn't think of making these without the right kind of cheese". She is right. The flavor is perfect.

They are so easy to make, only a handful of ingredients. The kids LOVED them, they aren't spicy they are just right. This make 10 large enchiladas so there will be leftovers for the next day. Nom Nom.

Ingredients

3 large or 4 medium chicken breasts
1 pkg of at least 10 big tortillas (Normal Quesadilla size not jumbo not small)
1 can of green Chile enchilada sauce (Hatch was really good from Smith's)
1 small can of diced green chile's
3/4 cup of sour cream
1/2 teaspoon of cumin powder
small handful of chopped fresh cilantro 
1 pound of Pepper Jack Cheese shredded

Directions

Cook and shred your chicken. Season them and boil until just cooked through. Shred with two forks and let cool. Put shredded chicken in large bowl and add 1/2 cup of enchiladas sauce (save the rest), small handful of cheese, 1/2 can of green chile's, 3/4 cup of sour cream, 1/2 tsp of cumin, a handful of chopped cilantro and salt and pepper to taste.  Roll the chicken mixture into the tortillas and place in a greased casserole dish. Pour the remaining enchilada sauce on top and spread evenly. Bake for 30 minutes at 350 degrees and add the rest of the cheese on top for the last 5 minutes. I served with a side a sour cream.

I enjoyed another day at home today, organizing, cleaning and pretty much haven't made a dent in things. It's OK because I am happy to be home, happy to be blogging and happy to be with my family. 

My girls were laughing in their room with the door closed and then came out looking like this.....I am grateful for washable markers. These two girls couldn't be more different, their personalities are completely opposite, they can fight like the best but they are best of friends. 


I found these delicious cookies that have Reeses Peanut Butter Hearts on them but can be used with regular small Reeses or even chocolate kisses. I think I will do Hershey's Chocolate Kisses on mine. I have made something similar to this before and the kids love them. I thought it was a cute idea for Valentines Day to do the hearts so I wanted to share it with you.

Riches to Rags by Dori was started based on the difficult times our family has been through over the last several years. I wanted to share with others that there are "Riches" in "Rags" and that no matter what life has to offers us we need keep any negativity out of our happy life. If you think negative and you talk negative that is what you will attract and receive. Same goes for being positive. Try it sometime, it really does work. 

Yesterday, I got the unfortunate news that I had lost my job. It was completely unexpected, I was floored,shocked and very upset. I went to work because my husband was hurt at work and has been home.  Immediately I found myself turning toward negativity, anger, resentment and blame. I had to change that and not allow any negativity and I did. This is a blessing in disguise, it will give me more time to blog, more time with my family and a new door and beginning is opening. I truly believe that. I just wanted to share with you that I KNOW how hard times can be for a lot of us right now but I promise if you focus on the positive, stay grateful and give LOVE that is what you will receive back. Hope that wasn't to gushy. 

My sister Rebecca gifted me a book called "The Power" to my iTunes. This book has changed my life. I am teaching it to my husband and my children. My daughter came home from school today and said she told someone in her class about it who was having a difficult day. It works, it has made our home a much happier place. I highly highly recommend it to anyone. It basically talks about what you give is what you receive good or bad. It is wonderful and I hope you will read it.  You can get it at your local bookstore or on Amazon. I feel so strongly about this book that I would also like to give one away. Just leave a comment about something positive and I will pick a winner sometime this weekend. 

                                                                        

Now on to the wonderful world of FOOD. 



I did a post a while back on Shredded Pork Tenderloin and posted a couple of different recipes. This time I wanted to make another one with Tacos. I bought the Pork Tenderloin at Walmart for $11.97 and it will feed my family of 5 for two meals and some lunches. It is a great deal, amazing flavor and goes along ways. These were sooooo delicious. 

Directions

Make your Pork Tenderloin and shred it using the recipe link above. I used vegetable oil to cook the corn tortillas to just enough to cook them so I could still fold them. Pat out the grease with a paper towel. Fill the shells with shredded pork and then lots of cheese. I put them under the broiler to melt the cheese and brown the edges. I pour just a little bit of the juice from the crock pot pork in each one for flavor. Add your desired toppings. 

The toppings I used were:

Fresh Pico De Gallo Salsa
Cotija Cheese from the Mexican section in refrigeration
Sliced Avocado
Salt and Pepper 
Cilantro

Simple Broccoli and Cheese Soup

Soup warms the soul. It just does. It brings a comfort on a cold day that warms your body with each bite. We have needed warm comfort food here in Wyoming with its wicked cold winter. We have been blessed with some warmer weather this week and I am going to enjoy every minute of it. I have a whole new respect for Mother Nature. 

I have favorites when it comes to soups and Broccoli and Cheese is one of them. I have never made it from scratch before but I have been on the look out for a good recipe. I have come across several but they were either to easy with not enough flavor or way to complicated with to many ingredients and steps. This recipe I found on Simply Scratch is right in the middle. Perfect ingredients that would use and not to many steps. Easy enough to make for any level of cook.  Serve with some warm bread and butter. I don't think you can ever make too much soup.

This is my kind of dessert, hands down. Strawberries, chocolate and cream......I have a big craving for this tonight. I found this on Butter with a Side of Bread with super easy step by step instructions.  There is a short list of ingredients and only a few steps creates this beautiful dessert that everyone will love. 

This would be a great dish to bring to any gathering where you were asked to bring a dessert. This one is a keeper.
