Happy New Years Eve!


Are you out and about celebrating New Years Eve tonight, sitting in front of the TV getting ready to watch the ball drop or getting ready to go to bed hoping your neighbors won't be to loud at midnight? I have to admit that while my kids were growing up I was always hoping for the quiet neighbors. Now that my kids are old enough to enjoy it I will do my best to make it fun. I just hope I can stay up that late. I used to be able to pull an all nighter with no problem, now I guess I am just getting old...

I can't believe it is the last day of 2012. It has been a long year with lots of rough spots but on the other hand there have been some wonderful moments. This blog is one of them and a few days ago Riches to Rags by Dori celebrated ONE YEAR! We have come a long way and have loved every minute of it. I have big dreams for 2013 and hope you will be there with me every step of the way. 

I had to end the year with something sweet and delicious. I ran across this recipe at The Prepared Pantry. Dennis seems like such a nice happy guy and knows how to cook! Tonight I am sharing with you his Sticky Toffee Pudding Cake. Nom Nom Nom with those bananas and whipped cream on top.

I am really making an effort to eat a little bit better. I am not on a DIET, I refuse because I always fail. I am just making some changes that should do me some good. I think my body is craving healthier food because when I come across the pictures I crave them! I love food so I can't give up all those wonderful things that I love but I can eat some good things right? Eating better doesn't have to taste bad and this proves it!

Lettuce Wraps open up so many possibilities. Fill them with whatever you want and whatever sounds good. I might have to do a separate post on all the many different Lettuce Wraps you can make. Stay tuned.....

This one stopped me right in my tracks.  I LOVE Blue Cheese and Buffalo Sauce and I think these look fantastic! The chicken isn't to saucy and the combination of everything just fits.  Gina at Skinny Taste has some amazing recipes on the lighter side and a wonderful blog.

It feels weird now that Christmas is over. I spent so much time rushing around and now it has all settled down and I am sad that I didn't take more time to enjoy it. The whole meaning of Christmas gets set aside to the hustle and bustle and all the gifts. I wish I hadn't fallen into that trap but I am ashamed to say I did. Next year I will do things differently. Very different. It was a wonderful Christmas though and the family time together was priceless. 

The food at holiday time is like no other. I think I gained about five pounds. I was looking for a good recipe that wasn't so heavy but has a nice sweetness to it. These Scones sound perfect. I feel so weighted down with heavy foods that this will be a nice change and I know the kids will love them. You can make these just 
because they are delicious or they would be great to serve at any gathering. These go on the Nom Nom list.

Finally it is Friday and I get those much anticipated four days off. No more stress of Christmas to worry about just for great days off with the family and some much needed

This is a short and sweet delicious post on Bacon Wrapped Asparagus. I found this great recipe on How Sweet It Is. SOOO Yummy. Even my pickiest eater looked at this and was excited about it. She loves Asparagus and this is another great way to make it and Bacon adds so much flavor to so many things. Sometimes you just need to spice up some of those vegetables.

I can't believe that we are almost at the end of the year already. It has been
a rough year and I am looking forward to a great new start in 2013.
 
 Someone told me today that their daughter in law is very superstitious and she
believes that in order to have a good year you need to start your New Year out the way you want your year to go. Hmmm, very interesting. She says you should surround yourself with family, have your bills paid to the best of your ability and fill you day exactly how you want your year ahead!
Whether it works or not I am game. It sounds wonderful.
 
What do you think is a good way to start out the New Year?
 
While you are thinking about that I found a delicious recipe on bell'alimento. I have a bag of frozen cheese tortellini from Schwans that I bought. I starting searching for whatever recipe that sounded good to me and stood out. We still have VERY COLD weather here in WY so I guess I was drawn to soup and it just looks so comforting.
 
This is a Tortellini in Broth and it is not hard to make. Serve with some nice warm bread and butter and you have a wonderful meal.

Crispy Chicken Chicken Tenders
What an incredible and wonderful Christmas we had. I was so ready for it to be over but now I am sad that it is gone. I have one of those husbands that has Christmas packed up and gone the next day. A month of it is enough for him. I have to say though it is a nice weight off the shoulders to not have to worry about it anymore.
I hope you all had a wonderful day and created lots of great memories. I can't say I was to happy to go back to work today but I have four days off next week and I work with some wonderful people and that makes everything that much better.
I found this recipe on Plain Chicken (love this site) and it is a perfect family meal that everyone will eat. Easy and great tasting ingredients that all will love. Serve with a vegetable,  some salad or potatoes. Ranch dressing can only make this that much better. The sauce is an added bonus.

"Those Potatoes" Perfect with Holiday Ham

 

"Those Potatoes"
 
 I wasn't planning on doing this recipe today since I did Creamy Cheesy Potatoes yesterday. A few people had mentioned that they were looking for a good recipe to go with Ham and this is the one! The one I posted yesterday I would do with Steak but this recipe is PERFECT for Ham. Since I can remember we have always had these potatoes when served with Ham. Once you have these you won't want to serve anything else.
 
It is very easy to make and sooo incredibly delicious. You will love this recipe, I promise!
 
Ingredients
 
1 bag of THAWED frozen hash browns
1 container of sour cream
2 sticks of butter
2 cups of sharp cheddar cheese
1/3 cup of chopped green onions
1 can of cream of chicken soup
corn flakes
parsley flakes
 
Directions
 
Thaw out the bag of frozen hash browns. Melt the stick of butter in the sauce pan. Add in the cheese, sour cream, cream of chicken soup and green onions. Stir until melted all together and nice and creamy. Grease a 9 X 13 pan and put in thawed out hash browns. Add the melted mixtures on top and use a fork to lightly mix in to the hash browns. Cover the top with crushed up Corn Flakes cereal and pour the other stick of melted butter on top. Top with salt and pepper and parsley flakes and cook at 350 for 45 minutes.

 Creamy Cheesy Potatoes

I am truly beginning to think there is no hope for me. I can't pass a recipe like this up. It's gooey, cheesy and everything I love with potatoes. I apologize now for this recipe because it is not diet friendly but it amongst the best of comfort foods and these days I NEED comfort food. I deserve comfort food. There is a time and place for rabbit food and today is not it.
 
These look amazing and I can't wait to eat them. I have no doubt the kids will devour them. I was the youngest of six and had to fight for my food at the table. I still fight for my food with my family. My husband is so giving with his food and shares and I have been known to growl if someone tries to take my food. Shameful I know.
