Steak and Mushroom Melt

I am a steak and potato girl and this is my all time favorite sandwich in the whole world. The flavor is amazing, I can't even describe in words how much I love this! My husband goes crazy over it every time I make it. I made a few changes this time and now it is just right.

I did a post a while back on how to sear a steak in a skillet. I believe it is by far the best way to cook a steak.  For this sandwich it is marvelous!

Off to the Mountains.....

Beautiful Day today in Wyoming, we took the family and went for a day trip about an 1 1/2 hour drive from where we live. Some of the most beautiful country surrounds us and we had a wonderful time. I really enjoyed it because I got to take lots of pictures. 

When we got home everyone was hungry and tired. I had already planned to make this for the blog so I was prepared to get it done quick. It is an easy recipe and a HUGE hit with the husband and family.

Just looking at this picture makes me crave a nice juicy and sweet Watermelon. There is something about Summer drinks that gets me so excited about Summer. My daughter can't wait to do a lemonade stand and I just might have to sell some of this as well. I came across this at Frosted Bake Shop which has some great recipes so please check out her blog. Really cute too.

My husband is a hot wing junkie. He always eats to many and it ends up making him sick but he always craves them again and wants more. On Sunday he was having one of those "Wing Cravings" and I didn't want to spend a $1 a piece at Pizza Hut for wings so my nephew who is an award winning BBQ Master from Bam Bam's BBQ (he makes the best pork I have ever tasted) told me of an easy quick way to make my own. He was spot on and they were delicious and so much cheaper!

What a smart idea from How to Reuse it Creatively. The water is enriched with calcium when you have boiled the eggs. So, next time you make hard boiled eggs, pour that water in the garden after it has cooled and let your garden have that calcium water instead of throwing it down the sink.

What an awesome picture! I found this via Pinterest and the first time I saw it there was no link! I panicked, I had to find this recipe so off I went on the search. Didn't take long, I eventually found the recipe that went with the picture from Lemon Drop who made it and took this picture. Isn't that a great picture? I love the colors and the lighting and it makes me want it! That is always a good picture when it does that.

Looks pretty simple to make.....

Put two caps full of vanilla extract in a coffee cup (or oven proof dish) place it in the oven at 300 degrees for one hour.. within twenty minutes the whole house smells fantastic!! (common trick used by realtors to make homes smell simply delicious)

This is my personal sauce recipe that I created. I love love love it and so does my family. When you have the pasta and the sauce you can make whatever you want in addition to that. My kids just like the sauce and nothing else, I love the shrimp, sun dried tomatoes and mushrooms, husband just loves the mushrooms. Everyone is different but you have to have the sauce!

Throw it in the oven at 350° for 25-30 minutes. That’s it. Leave the husk on, it will trap in the moisture, leaving you with juicy, tender corn. The husk and silk will peel away easily once it’s cooked.

Add some butter, salt and pepper. YUM!

We have had the best weather here in Wyoming the last couple of days and then it got cold again. Such a bummer but that is the life in Wyoming, you never know what you are going to get. The kids were playing in the sprinklers just yesterday! 

I found this delicious recipe on Pillsbury. I am always looking for quick easy things to make for my kids for when they come home from school and this looks like something they would love with a few changes. My husband and I would love this recipe the way it is. I will probably make it more kid friendly for them.

Braided Spaghetti Bread

My six year old son is going to go crazy over this recipe. He loves spaghetti and can eat it like a grown man. I have never seen a child eat so much. This is a SUPER EASY recipe. The hardest part is waiting for the Rhodes Bread Loaf to thaw. I will add some meat to my sauce because we like our sauce a little chunkier with meat. Plus, I really like Prego's Traditional Spaghetti Sauce.

This is one of those pictures that I talked about in a previous post where it makes me want to run to the grocery store and get the ingredients so I can make it right now! Unfortunately for me, I don't have a car today! So, I am left with a hungry belly and no lunch. 

Lucky for you though, I can still share it with you. Doesn't this look amazing? Add some ranch dressing to that salad and it is perfection. THIS WILL BE FOR DINNER TONIGHT when the hubby gets home. It is going to taste even better since I will be thinking about it all day!

I think I found another one that is going to be my favorite. I LOVE Cobb Salad!!! This is a different dip than I have seen for a while and it will be a party favorite. All the ingredients I love AND there is bacon. Everything is good with bacon. :)

Today was a wonderful day here in Wyoming. 72 degrees, the kids played in the sprinklers and it was a wonderful lazy day. Before I knew it everyone was hungry and it was lunch time. I didn't want to go to the grocery store, I was so comfortable being at home. I looked in the freezer and had three chicken breasts and thought today would be a good day for stir fry. I used the ingredients I had and it turned out great. Everyone loved it.

It was a gorgeous day today here in Wyoming. Nice and warm and only a few clouds in the sky. We packed up the car with a cooler for enough food and drinks for a whole day of roaming, hiking or what ever we wanted to do. We just got in the car and drove. I couldn't wait to get some pictures as we headed for the Petraglyphs. 


We hiked up and I went to take my first picture and I had left the battery at home in the charger! I was heartbroken but we ended up having a wonderful day anyways (well until my husband got a speeding ticket while I was sleeping!) and so life goes!

Creamy Chicken Taco Cups

Just look at them. Little cups filled with everything I love! These really look delicious and those of you who have followed me for a while know how much I LOVE bite size recipes! For some reason my kids eat way more when it is bite size then if I put a pile of something on their plate. They are just easier to eat for them I guess, either way I have lots of recipes in my archives on this blog (see right side of page) that are bite size and we love them. 

I found this recipe on For the Love of Cooking. Great recipes on her blog so you should check it out. She has been around a while and you might recognize some of her other recipes. 

You can follow the recipe exactly, use the ingredients you like or make it with your own twist. That is what makes the wonderful world of cooking so wonderful.

CREAMY CHICKEN TACO CUPS
INGREDIENTS:
2 cups of roasted chicken, chopped
1/2 cup of black beans with 2 tbsp Mexican rice, mixed together (leftovers)
2 tbsp cotija cheese (yum)
2 tbsp green onions, diced
2 tbsp cilantro, chopped
Juice from 1/2 a lime
2 tbsp sour cream
2 tbsp roasted tomato salsa (see link above)
Sea salt and freshly cracked pepper, to taste
3 large flour tortillas, cut into large circles
Refried beans (see link above)

Garnish:
Sour cream
Cilantro
Green onions
Tomatoes
Avocado
Salsa
DIRECTIONS:
Preheat the oven to 425 degrees. Coat a muffin tray with cooking spray.
Chop up the chicken then combine it with the beans/rice, the cotija cheese, most of the green onion, most of the cilantro, juice from 1/2 a lime, the sour cream, and the salsa. Mix until evenly combined, taste then season with sea salt and freshly cracked pepper, to taste.
Using a biscuit cutter (or a ramekin & a knife) to cut out small circles from the large flour tortillas. Carefully place the flour tortilla circles into the muffin tray. Add a spoonful of refried beans into each cup followed by a bigger spoonful of the chicken mixture. Top each cup with a small about of cheddar cheese.
Place into the oven and bake for 15-20 minutes, or until heated through and the tortillas are crisp. Garnish the top with sour cream, avocado, tomato, green onion, and cilantro. Serve with salsa if desired. Enjoy.

I am warning you now. These are addicting!

The last couple of days I have had chocolate covered Strawberries on my mind! I love them! I have made several batches of them since Strawberries have come out. My kids love them and they are so easy to make. 

Two days ago I bought some Klondike Ice Cream Sandwiches at the store. I never have bought them before but they looked good and they were on sale. I was pleasantly surprised, they were the best Ice Cream Sandwiches I have ever tasted. Delicious!
I was having a craving late last night for chocolate covered Strawberries but didn't want to make them so late. I chose to eat a Klondike bar and while I was eating it I was thinking about the Strawberries and then a light bulb went off. I had to combine them somehow, and this is how the Strawberry Klondike Volcano's were created. 

I cut them and arranged them to make kind of a volcano with a hole in the middle. In the middle I stuffed more Strawberries and poured chocolate down then covered the outside with the Strawberries and drizzled melted chocolate over those and sprinkled powdered sugar on top. The very best part is when the chocolate hardens and you take that first bite of Ice Cream Sandwich, Strawberry and crunchy chocolate. Oh, it is divine! I am hooked and you will be too! I will toot my own horn on this one, they really are that good.
