Keto Frozen Cheesecake with Chocolate Ganache

Super easy and super yummy. 

This recipe makes 4 servings but I always double mine for 7 or 8

Ingredients

Cheesecake Filling

•  4 oz Philadelphia Cream Cheese
•  2 Tbsp Sour Cream
•  1/4 erythritol (I use Trivia)

Ganache

•  2 oz Unsweetened Bakers Chocolate
•  1/2 cup Heavy Whipping Cream - splash of water if needed for consistency.

Instructions

1. Use a hand mixer and mixed together cream cheese, heavy cream, sour ream and Trivia until creamed together.

2. Melt bakers chocolate in the microwave for about 1 minute.

3. Add whipping cream and combine well. Takes a couple minutes.

4. Dollop the filling into cupcake pan and top with Ganache. Cover with plastic wrap. Put in freezer for 2-3 hours.

5. Enjoy! Serve topped with strawberries (optional)

Eating low carb is not hard! If I was on an island and had one thing to eat and it was only Cheese I would be happy. I never made it on a diet that didn't allow Cheese. My new way of eating low carb makes life much easier.

These Cheese Snacks are a favorite in our house with the whole family. The kids love them. I make sure that I always have some on hand. When I know that I am going to be out for a while I take some in my purse in case I get hungry.

You can take this same recipe and use it for taco shells, etc. Super easy to make.

Whenever shredded cheese goes on sale I stock up, especially on the big bags.



Directions

Preheat oven to 400 degrees

Spray Pam (Olive Oil) on sheet so the cheese doesn't stick.

Layer shredded cheese on the baking sheet.

Bake for 20 minutes.

When you take it out of the oven turn the pan so the grease runs out of the corner and drain. The cheese should not move when you tilt the pan, if it does it isn't ready.  Top with Garlic Salt, Pepper and Parmesan Cheese.

Let cool and scrape all around the sides and corners. Use a spatula as you go to help pull it up by scraping underneath it.

Using a pizza cutter cut in half.

Using one half make one inch slices and then turn the other way and roll it for small squares.

That's it! Enjoy.

I like to eat these with Onion and Chive Cream Cheese. YUM!

Since making the choice to go Gluten Free I have been so surprised how easy it has been to eat better and gone are the days of boring Gluten Free foods. There is so much available now in the grocery stores, whole food stores and Amazon. 

Because I am eating better my kids are getting the benefit of it as well. If I eat fast food they will too, bit eating Gluten Free has not been hard for then because most the time they don't even know they are eating it.

It is difficult to put a life changing experience into words because it is so important for me that it comes across where it can help others that might be experiencing the same thing.  I LOVE FOOD and always have. I just love to eat. I have always sworn that I have a bigger stomach than the average person and that is what makes me so hungry all the time. :)

I have been pushing the Cold and Flu Salves for a while now. I can't stress enough how important it is to be prepared and ready when you have someone sick in your home. There are so many scary viruses out there right now and being prepared is the key. If you wait until someone gets sick to order the kit it will be to late. These oils may be helpful with helping ease the symptoms. 

If you have ordered the Cold and Flu Salves or Essential Oils or are thinking of ordering it this post is here for you to know how to use it when it arrives. 

The Cold and Flu Salves will arrive with four oils or salves depending on what you order that contains, Oregano (Nature's strongest anti-biotic) , Melaleuca (Proven to fight bacteria, virus and fungi) and Lavender Thieves (Support healthy immune function and Lemon.  

I always have this ready for family especially right now with all these viruses out there.

Be diligent in washing your hands and cleaning counter tops and door handles. 

If your child is anxious when they are sick and signs of anxiety show use Jeddy's Blend to help calm them and relax. Rub some on the bottom of the feet, on the back of the neck. This really does help with anxiety.
