Tomato Mozzarella Toast



Mozzarella Tomato Toast

One my absolute favorite lunches is baked cheese on bread. I have been eating it for years! I have always used sharp cheddar cheese on mine. When I ran across this picture I searched to try to find the owner of this beauty but I had no luck. I LOVE the idea of using mozzarella cheese, tomatoes and onions. Add a slice of bacon on there and I will be in heaven. This is a whole new way to make my favorite toast. My mom used to make this for me as a kid. There is nothing like baked cheese. 

Ingredients

Whole grain bread
Mozzarella cheese sliced thick
Tomato slices
White onion slices
Green onions cut up.

BACON!!!! The picture doesn't have it but I am adding BACON! I have a secret crush on Bacon. Shhhh


Directions

Pretty self explanatory but here it is. Put slices of thick mozzarella on bread and put in the oven on broil. Watch it (it won't take long) until nice and slightly brown on top and melted. Make sure it is melted. Nothing is worse than almost melted cheese. Add BACON and sliced tomatoes, white onion and green onions. 

Serve with a small side salad with ranch dressing. Perfect lunch. YUM.

Since you asked, this photo has been used on a few blogs (including one for Gluten Free Brioche even though the photo doesn't involve gluten free bread), but was first used on a French blog for its open face recipe of shallots, tomato, snails and cheese.   10. So yum! I added fresh avocado slices on top....no bacon for this veg head, bit thought frwdh spinach or basil would be good to try next time! Thanks for sharing!

  14. I made this today with a few changes! I used white bread, shredded mozz, fresh basil, fresh garlic and a pinch of salt ontop of the tomatoes! YUM! I'm posting a blog about it tomorrow! You'll see my own pic of it in my blog! Thanks for the inspiration to keep trying simple tasty recipes!

  17. I kinda do something like this. It's a caprese styled grilled cheese where I add fresh tomato and basil w/mozzarella. Yummy.

  21. I keep "real" bacon bits on hand all the time. Sprinkle a few of these on the bread and place these under the cheese and the other toppings before broiling. You get the bacon without having to mess up the pan or microwave.
