Amazing Chicken Tortilla Soup

This might just be my favorite soup of all time. My sister in law Ava makes the most amazing food and while I was over she made me a bowl of this soup or a soup very close to this. I tried to remember the recipe as well as I could off of memory so I hope she approves.




I made this over the weekend and my husband and kids went nuts. My husband ate two bowls and ate it for lunch the next day and said "I want this again this week". He went on and on about the flavor. It really does have an amazing flavor that you will love. You will not be disappointed. I promise!

The garnishments on top make all the difference. The Homemade Tortilla Strips are a must!

You can buy these at the store now but I prefer to make my own and bag them up for salads or anything else I could use them on. They are so good! All you do is thinly slice up corn tortillas and pour Extra Virgin Olive Oil on them and make sure they are just coated but not soaking in it. Put in the oven at 400 degrees and just keep checking them and stir them around until they are crispy to your liking! I add some Kosher Salt to them as well. 

Homemade Tortilla Strips


Ingredients

4-5 small carrots chopped
4 stalks of celery chopped
 1 medium onion chopped
4 teaspoons cumin
salt and pepper to taste
3-4 T of olive oil
3 teaspoons of minced garlic
3 boxes free range chicken broth
3 large chicken breasts cooked and shredded (I boil mine in hot water)

Garnish with lots of homemade tortilla strips, cheese of choice,
avocado, green onions and cilantro.

Directions

In a large pot add in olive oil until hot on medium high and then saute celery, carrots and onion that are chopped. Add the minced garlic and cumin seasoning with some salt and pepper. Saute until soft but a little crunchy about 10 minutes. Add boxes of chicken broth, handful of cilantro (optional) and shredded chicken and let simmer for about 20 minutes on medium low (not boiling just simmer). Add more cumin to taste as well as salt and pepper. Serve in a bowl and garnish with toppings.
