Pineapple Coconut Banana Smoothie

While I am slowly but surely melting in my house today while it is in the 90's outside, I ran across this perfect looking smoothie for a hot day like today. Luckily, I have a wonderful husband that put a little air conditioner in the window so I wouldn't sweat to death while working. I am a very grouchy person when I am hot. I hate sleeping in the heat. It doesn't usually get this hot in Wyoming!

I found this at Baking Bites and now I just really wish I had one. Tomorrow is my sons birthday and these sound delicious to make for an afternoon treat and will be so refreshing.
The ingredients soundwonderful! Hope you enjoy it. 

Update: Here is a tip someone posted in the comments below.  

Put the cut up bananas and pineapple in the freezer for about 6 hours before you make it, it makes all the difference.

Yep, I would have no problem at all waking up to this wonderful looking breakfast quesadilla. 
The photography on these are beautiful from Bake or Break. I love a good quesadilla and what a great idea to make it into a breakfast. This is on my list for Saturday morning for the family and I know my kids are going to love it. I just ran across this recipe and wanted to share it with you.

This recipe can be cooked in a slow cooker or on the stove top. 
When I found this recipe I had to share it with you because it is right up my alley. I really need a new slow cooker. Mine is ancient and I might just have to go buy one so I can make this. It has been so hot that I can't bear to turn the oven on yet. 

The only thing I would do differently is buy uncooked shrimp, clean them up,take the veins out, grill or cook them, cut them up and add into the soup. Yum

Fritos Taco Salad - Kid Friendly

Fritos Taco Salad - Kid friendly

It may be kid friendly, but this is my favorite taco salad. So easy to make and so delicious. My kids and husband love this recipe and it is a family favorite. Especially nice on a hot day. You can make the meat ahead of time a freeze it for those hot days. Hope you enjoy this recipe as much as we do.


1 lb of ground beef
1/2 package of Taco Seasoning
Bag of Fritos Chips
Sharp shredded cheese
Ranch dressing (Hidden Valley Packet)
Head of Lettuce
Can of black beans (drained and rinsed)
Green onions (sliced)


Cook your ground beef in a skillet, when browned add 1/2 package of taco seasoning and 1/4 cup of water. I do the water so it isn't so thick and dry, you can add a little more if you need to. Cut up your lettuce, tomatoes and slice your avocado. On a plate start with the lettuce then add the meat, black beans, onions, tomatoes, avocado slices and pour fritos chips around the sides. Drizzle ranch dressing on top and the top with shredded cheese.

Swedish Meatballs and Gravy

It was 93 degrees today which is NOT NORMAL for us, it doesn't usually get that hot here. I almost melted today in the kitchen making this meal. Most people don't have A/C in Wyoming because they don't need it! Heaters YES, A/C NO!  IT WAS SO HOT! It is now 61 and we are starting to get some relief. It didn't help that I got sunburned yesterday and my scalp is on fire. 

Welcome to my Sunday dinner. Oh was it delicious and worth every minute (while melting) making it. I used to buy IKEA frozen meatballs and their packaged gravy when I lived by one. I moved away and haven't had them since. I LOVE Swedish meatballs. I don't like any other kind that you can buy at the store. They all taste weird to me. I did a little research and picked a few things here and there that I found and then put my own twist to it and I am in love! The meatballs were perfect and the gravy was heavenly. I took lots of pictures to share with you on the process. I doubled the sauce recipe so I could have extra for biscuits and gravy. The recipe below is for one batch only. Oh nom nom.

This is not a low fat meal by any means but it is one of those meals that you make once in a while and allow yourself some happy food. You won't regret it. Kids loved it and husband had two huge plates full. He was quite full.


1 lb of ground beef
1 lb of ground pork
1 large white or yellow onion
2 T. of butter

allspice seasoning
nutmeg seasoning
2 t. salt 
1 t. pepper
5 slices white bread
3/4 cup of milk
 2 eggs

1 package of wide egg noodles.

1 can of beef broth
1 stick of butter
3/4 cup sour cream
1/3 cup of flour
salt and pepper


1.Tear the edges off five pieces of bread, put them in a bowl and pour 3/4 cup of milk on top and let sit for about 10 minutes while it soaks up the milk. Poke around at it if you need to so it gets all the milk. Whisk together until well blended. 

2. Using a cheese grater, grate the onions. Heat up a skillet with two Tablespoons of butter and saute the onions until translusent and soft. Put aside. Let cool.

3.In a separate bowl add the ground beef and ground pork, 1/2 teaspoon of allspice seasoning, 1/2 teaspoon nutmeg seasoning, 2 eggs, cooled grated onions and salt and pepper. With clean hands get your hands in there and mix it together really good.  

4. Heat up your skillet that you used the onions in and melt a stick of butter. Scoop in about 10 meatballs and cook and cut up like you would taco meat. When that is cooked and brown then add beef broth, sour cream, flour, salt and pepper. Whisk together and simmer on medium low heat until slow boil. It will start to thicken so don't let it get to thick, as soon as it thickens turn the heat to low.

5. Using a small cookie scoop or tablespoon scoop out meatballs and put in a greased baking dish. Cook at 350 degrees for 15 minutes. Take the stuff off the bottom so it looks more like a ball and serve over noodles, top with gravy sauce and sprinkle with dried parsley flakes (optional)

6. Cook your noodles whenever you want to during the process.

7. Put noodles on a plate, four meatballs, pour sauce over, sprinkle with dried parsely (optional) and serve.

We had a big day today planned so I wanted to start the day off with a good filling breakfast. We LOVE McDonald's Sausage McMuffin Egg Sandwiches! The problem is there are 5 of us and it ends up costing over $20 every time we get them. I decided I was going to make my own. Not only was it much cheaper but it was fresher, bigger, tastier AND the kids said it was better than McDonald's! SUCCESS!

Today was Flaming Gorge Days. First, we started off at the parade where the kids ended up getting way to much candy. We were at the front of the parade and in the shade. YES! Then we spend the rest of the day at the park. What a great day we had. Lots of sunburns though even though we used plenty of sunscreen. I used a wonderful sunburn spray I got from One Good Thing by Jillee. LOVE IT!

These Sausage Muffin with Egg sandwiches are super duper easy to make. 


1 package of English Muffins
1 package of Jimmy Dean Original Sausage
Slices of Kraft Cheese
Large mouth canning lids


Flatten out some sausage patties and make them really thin. You want them to be bigger than the English muffin because it will shrink when it is cook. Cook them in a hot skillet coated with non stick spray. Cook until done and brown on the outsides. They are done when they are firmer and not bendy. Is bendy a word?

 In another hot skillet put your lids in and crack one egg into each one. A little bit will come out the bottom but most will stay in. Break the yoke  Here is the important part. Add about 3 Tablespoons (or more if needed) of water in the hot skillet and cover until eggs are done. The steam will cook them. When they are done scoop them out with a spatula with the lids onto a plate. 

Take a knife and cut around the inside edge to cut off the extra. Toast your English muffins, put the sausage on first with a slice of cheese on top and then the egg. Salt and pepper to taste. Heat up in the microwave if you need to. I did for 25 seconds. 

No more morning runs to McDonald's. We are making our own!

Bakery's Banana Pudding

Back in the Day's Banana Puddin Pie 

Forgive me, it has been a VERY long long week in the courts. Seriously, you just can't imagine what goes on behind the scenes in a court. Love my job though. My kids came in to visit and got to sit in the Judge's chair in the courtroom. I told them you never want to be standing in front of this chair unless you are a lawyer. 

I will be a baking fool this weekend catching up on what I want to make so stay tuned.....

I think I died and went to heaven when I saw this recipe. All my favorite ingredients together. If you haven't tried Jalapeno Cream Sauce you have to try it. I did a post a while back on Caramelized Chicken with Jalapeno Cream Sauce and it was amazing. Serving it over Shrimp Enchiladas? I seriously could eat this for breakfast. You have to give it a try, the sauce is so worth it. I found this recipe on Damn Delicious and she has a great step by step picture tutorial.

Strawberry Raspberry Trifle

This recipe took top prize in the low fat category in the Wisconsin Strawberry Festival Contest. 
Super easy to make and just look at the ingredients! So delicious. Everyone loves Trifle (at least everyone I know). This is perfect for your next summer party or get together. Throw some blueberries in the mix and it is perfect for the fourth of July!
